No experience with "lace up" saddles - is it normal to only use a few of the holes? I would guess the number of holes used affects the feel/hardness of the saddle?

Yes and also depending upon what holes you lace up will also change the profile of the saddle

I have the same saddle.

It has a tensioning bolt in the nose.

I read somewhere, possibly in the instructions, the lacing is mostly cosmetic in that it stops the sides of the saddle flaring, but has little impact on comfort or feel.

Some racier Brooks saddles are cut away at the sides.
