The ingredients will depend on what is left over in the fridge, but a must is to have a soft cooked fried egg on the top so that when you cut it the yoke runs down into the B&S!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

Ahh I grade a greasy spoon by the quality of its bubble and squeak.My brekkie of choice is B&S, chips, (yes i know carbs with a carbs chaser) beans, double runny fried eggs, with the egg oozing all over the B&S, fried onion and fried mushrooms, lashings of ketchup and a mug of sugary tea. I'm mostly veggie hence the lack of hoof, bollock and eyelid products, but that'll set me up till at least lunchtime, champion. I had a look but could'nt find a drool over keyboard emoticon. but basically writing that has induced......

Gotta be made with lard though, to make the potato go crispy. Made with oil, its just not what it used to be as I remember from my childhood.

Bacon and lot's of it. I cook my left over veggies in the bacon fat. It's become a fast tradition after Xmas to meet round ours for bubble 'n' squeak on Boxing day (even though there is no Boxing day in the US). So far I have about 15 regulars who turn up. It does mean I have to cook a whole bunch of extra veggies on the day to have sufficient lefts overs on the next. We do the same thing after Thanksgiving.

Ooh, I'd forgotten about champ, we used to have it as kids. Except we called it 'thump' for some reason.
