On the flat, the normal cadence would be anything between 85 to 105 (+/-) rpm.

What’s your cadence when peddle out of saddle on the flat (say a reasonable sustainable distance)

Peddle
Try to sell (something, esp. small goods) by going from house to house or place to place

Back on topic : my off-saddle cadence tends to be a bit higher than on-saddle, and I also try to keep my knees bent while pedaling off-saddle. I generally don't keep it up for long, though, generally just long enough to give my speed a bit of a boost, then I'm back on-saddle.

Back off topic : as a youngish lad, I used to deliver leaflets door-to-door, probably the most underpaid and cr#p job ever. At least I got to ride my bike while doing it, so you might say I was peddling while pedaling! Those were the days...

You can shift up a gear you know!
Not when your bike doesn't have another gear to shift to :P
