I would just look at whoever has an office at the airport.

We did a home made fly-drive package a few years ago and all worked out fine.

As mentioned above, when you get the car, take a decent quality photo of each side while it is still in their car park (and let them know you are doing this). They will then know not to try anything on with you and you are have proof if they do.

Always seems to be some extra charge for insurance excess damage insurance waiver cover or something.

Get one with aircon if it is hot where and when you are going!

I just hire through a broker - CarHire300.com have always been OK, and travel supermarket and the like are good too.. Most French firms seem to do full-to-full for fuel, which is the best way to go. They charge you for a tank of fuel, but refund it if you bring the car back full. Full-to-empty is always a rip-off, so avoid it. It's not unknown to get a free extra driver, so do dig around. And definitely get the extra insurance before you go - www.insurance4carhire.com, and there's others.

It won't affect you but I hired a car for 6 days and was given a full tank which had to be paid for on hire. When I pointed out that we weren't going to use anywhere near that amount they said " turf merde, monsieur"

I used Easycar last time I was abroad. They are a brokers, but show who the hire firm is and the fuel policy. I always go for full to full. Spain is terrible for bad fuel policies - full to empty or return with the same amount.
Use your phone for navigating, you will use about 10mb a day so a roaming deal will be cheaper than renting one.
When you get off the plane the driver should head straight off to the hire desk, saves ending up at the back of a plane load of people who chose the same firm.
