You really need to change the front chainset to a compact. About £30 used. It will tour fine. I've done it on a similar bike with no problems. 2 panniers and full camping gear.

For security. Buy a rape alarm. Attach to bike and attach a piece of fishing line [buried in the grass] , between alarm and a tent peg. If the bike is moved the 110dbells will wake the whole campsite.

Just take the front wheel off. It then cannot be ridden......
