I've just built up a Surly Cross CHeck for road use but given I'm running 10 speed on it and I have some 28" MTB tyres, I'm going to pick up a 10 speed wheelset on the cheap when the opertunity arises so I can switch out quickly to do some cross on it.
As cassettes wear with chains, I'm going to need to use just the one cassette and swap onto the different rear wheel each time aren't I? Otherwise if I have two cassettes, the rarely used cross one will not mesh right with the chain which gets used on the road a lot.
