Cooking steak blue

At a good restaurant I will have a steak rare, if I'm not sure of the quality of the supply then I may go as far as medium. Rather than a blue steak I would rather go for tartare.

A blue steak should be warm in the middle.

Once in my Dads restaurant a customer asked for her steak raw. He cut the steak off the joint, trimmed it up and served it ...xx(

There's a butcher that services the hedgies of Notting Hill, about a mile from here. It's called Lidgates. Have a look at their beef steaks. £33.30 for a single 180 g fillet!

And don't forget a good steak the animal should be hung for at least 28 days. 35 better, 42 even better after that there isn't much difference in texture or taste.
