I sampled some when I had a donut burger with a side dish of brisket. I was unimpressed with it. It promised so much but delivered so little.

I was going to make soda bread but by the time you buy the buttermilk it costs the best part of £2 for a 500gm loaf. Anyone made it using milk and vinegar instead?

Make buttermilk with ordinary milk and lemon juice, works a treat innit.

I liked it and I didn't get to see much of it, so yeah. If it doesn't get eaten put it to one side in case you ever lose a hammer.

It's dead easy to make.

It has a much more course texture than sponge cake. I love cornbread and make it from a mix that you just add an egg and a little milk and bake (I add some extra sugar or honey to the batter too). I used to eat it more often until I found out how much sodium it has in it. Sometimes people still use the phrase "old enough to eat cornbread without choking" when you ask them their age and they want to be a smart ass.

Even better are hushpuppies (where the shoes got their name). It is deep fried cornbread batter. You have to be careful about hushpuppies, they can either be excellent or hard as a rock. They are served at a lot of BBQ or Seafood Restaurants in my area. It is almost a requirement to have good hushpuppies and iced tea for them to be successful.
