Cornbread

Lois and make Cornbread 2 or 3 times a month.

Here is the recipe we use:
Dry ingredients:

4 oz corn meal (Polenta) .... Fashionably expensive in the supermarkets and health food shops, but only 60p per Kg for a top quality brand on the market and in the ethnic shops.

4 oz Plain flour.

1 oz Sugar.

1 Teaspoon Salt.

1-2 Teaspoon baking powder.

Wet ingredients:

7.5 fl oz milk.

2.5 fl oz vegetable oil (we used extra virgin olive oil).

1 egg.

Combine and mix thoroughly all the dry ingredients in a bowl.

Combine all the wet ingredients in another bowl.

Then mix the wet into the dry thoroughly, turn out into an 8 X 8 tin, and allow to stand for 15-20 minutes.

Bake in a preheated oven at 400 degrees for about 20 minutes.

1 tsp of sugar, recipe I used wasn't sweet, think I'm going to try chilli and cheese versions next.

And seeing as we're all chucking tunes in...
