Been in the process of building this up for the better half as an all-road tourer.
XS steel frame with Shimano GRX mechanical,Halo 650b wheels with Vittoria Terreno dry tyres,Genetic cockpit and Hope carbon seat-post,bb and headset.
Still to get PFW 650 beast mudguards and a still to be decided rack(probably stainless).
The hydraulic Sub brakes are 'interesting' to set up and the main levers are still a bit soft so probably still a bit of air between them and the sub levers;the front mech is also a bit different in setting up with the integral cable adjuster;wish she'd gone di2
