We stayed in Dubrovnik last September - not somewhere that I'd go road cycling, but a good place to visit.
We have 5 days in Zadar and 2 in Split this coming September.
You will never go to a more football mad city than Split! Football is religion there (its also a lovely city)
To the OP - I would thoroughly recommend Croatia. I went along the Dalmatian coast. Sunny, cheap and beautiful. If you get a chance to go out to any of the islands off that coast, take it (especially Hvar)
I've had good holidays in Istria (north, self catering), Dalmatian coast (middle 4* hotel, I missed the day trip to Split due to sickness) and Dubrovnik )onger ago 4* hotel).
Would definitely recommend for an alternative beachy holiday. Bled worth a day trip from the north and Mostar from the middle.
There's also inland stuff around Zagreb with forests and waterfalls but yet to do.
We went to Croatia last year. Stayed in Dubrovnik, which does get a bit busy with cruise ships at times, and Split. I preferred Split but both are worth a visit. There are plenty of water taxis to visit other delightful towns up and down the coast. Enjoy.
