Curry D'oh! moment.

I got in, and made a curry. I thought, I'll do this properly, with mango chutney on the side, and the mini naan bread I had in the freezer.

So I warmed the naan through. Served the curry, the rice, the dollop of chutney.

Sat down, and ate it. Mmmm, good. Pity I don't have anything to mop up the last of this sauce...

I'd left the naan in the kitchen. So I fetched it, but by then I'd pretty much scooped all the sauce up with my fork, so it was a bit dry.

Still, it was a good curry - tikka paste, onion, garlic, pepper, courgette, prawns, tinned tomato and coconut. All thrown together in the ten minutes it took the rice to cook.

I am about to dish up beef phaal, chicken rogan josh and chicken bhuna to some friends when they arrive.

The phaal is incendiary and I've put barb wire round the edges of the serving dish to stop people getting to close to it in case they fall in.

The other two dishes will cater for the more genteel members of the diners.

Did my first Thai Green Curry last weekend - all fresh ingredients (well had to use lemon grass in olive oil as couldn't get any fresh). Fab.....

Well, I ate the curry and forgot the naan, only remembering it when I had no more curry to dip it in...

Sorry, ate the lot, it was only a mini naan, and the curry was all leftover noggin ends of things.:wacko:

Forgetting the Naan is a perfectly understandable thing. But leaving none for me! :biggrin:

How do you get curry to be nice and spicy without being too hot?

Also, if you add (more) yogurt (bio-yogurt like Onken, preferably, as this doesn't have the tangy 'edge' that other yogurts have), this will reduce the heat of the spice.

I made a thai red curry noodle, chicken soup for dinner. Cheated and used a paste mix from the Chinese supermarket (Wing Yip). I thought I was used to hot food but I had to make a mango lassi to cool down.
At least my sinuses are clear now:biggrin:

I don't use any yoggit, mine are big pots of dhal for divvying up for the freezer.
Could I stick some in and still freeze and reheat it ok?

I was going to say something along the lines of, "14 posts on Arch forgetting her naan bread and she calls Greedo trivial" (:tongue::evil::biggrin:) when I realised it had morphed into a 'my favourite curry' thread;)
