Looks like most people get off the ferry, turn left and head up the coast.
A couple of other suggestions:

Turn right off the ferry and head down the coast to Zeeland. You'll see some of the most incredible engineering and some pretty towns (Zierikzee and Middelberg in particular).

Jump on the train to Maastricht and ride up some hills (yes really!). The food's better and you can pootle over into Belgium and Germany.

I'll second that, Maastricht is a very nice place to visit. It has some hills, from Maastrich you can visit Aachen, Germany (also a very nice city) is 30kms away, Belgium is less than 10kms. On the way back North you can cycle through the Hoge Veluwe National Park among other sites.

The North is ok for a few days but than it can become monotonous. The citys and towns are nice but between them can get boring
