Do all chilli's ripen to red?

I like growing chilli's

I like eating them more than growing them

When I have grown them before they have been red by now. This year's are very, very long. They look like green beans.

Will they go red like the birdseye's I am accustomed to? When should I harvest them?

Nope, not all chillis ripen to red - There are green varieties.

However that said, this year my chillis which I know should be red are taking a very long time to ripen. The first chillis that were on the plant are now a darker green than when they were new, so I think they are in the process of ripening.

I've heard of people harvest the chillis as soon as they grow to size, whilst they are still green, and then leaving them in sun-light to ripen. This apparently works, and allows the plants to produce more chillis, although I have never tried this myself.

bleeding hell ! i aint even got flowers on mine yet - just growing jalapeño this year and pickling them all ( really lovely ) as last year i grew naga something and although i eat whatever make with these chillis i can't say i enjoy it as they blow my socks off . pickled some chillies last year and just couldn't get enough of them - if you haven't done that yet i really recommend it

A friend of mine makes chilli vodka.

Drinking the one made with his strongest chillies is like gargling with barbed wire but very more-ish.

dont know if you mean pickle or chutney - there are loads of both on interweb - never made chutney but will this year and the pickling one i liked best was just sugar , pickling vinegar and couple of cloves of garlic - i was eating them constantly - even took them in my sandwiches - never got bit by the mozzies - didn,t get many kisses of misses either - going to eat more this year ^_^

Getting the messages
Get yourself some seeds of the small upright chillies and grow some next year as they look great (come in lots of colours) and as they are perenial plants can be kept over several years as house plants (if you can keep the whitefly at bay!)

Once I harvest this year's; how do I make this happen?
