Many aeroplanes dont show up on the tracker. Do you know why that is?

There are several reasons why some aircraft may not show up.

While most modern aircraft continuously broadcast their position in a format that enthusiasts with the necessary kit can pick up and feed to the flight-trackers, some aircraft don't - older ones, for example, or many military ones, for obvious reasons.

In addition, some aircraft (for example, certain business jets) that do send the data are excluded by some (but not all) of the flight-trackers because they have an agreement with the aircraft's operator not to show where it's going. That kind of information may sometimes be considered commercially sensitive (Company A's aircraft lands at the HQ of competitor Company B during merger negotiations).

It depends on the app. Radarbox sometimes has flights that Flightradar doesn't and vice versa.

It depends on the app, and whether or not the aircraft has a transponder activated.

Amongst a bunch of other considerations (see above).

Most aircraft nowadays have a transponder (their use is mandatory in many airspace areas), but even some transponder-equipped aircraft don't transmit data on their position.

If you really want to know what can and can't be detected, then you can nowadays buy a very cheap receiver that isn't subject to the vagaries of internet apps.
