I have an old set of DT Swiss R1600 rims, just got the bearings changed and a new freehub. Would it be possible to respray the rims without dismantling the spokes/nipples etc?

If you are a very good sprayer and you are exceptionally precise with masking up, yes.

If not it will look like something the dog brought up.

I recently had to replace a rear wheel but couldn't get an all black one to match the front so spayed the rim (disc) and spokes with a rattle can, hub was already black. It looks okay but if you're fussy it may not be acceptable.
The hardest part is making sure you've covered all the spokes.
