Dynamo lighting is the way to go and any lights which meet the German standard will be fine. Some are of course better than others but can get very expensive. Axa Pico an excellent budget option for very little money.

I have a Shimano dynohub and a B&M Senso front light., but have never grasped how the Senso bit works.

The light has a three position switch, off, and two positions that turn it on.

What is the difference between the two 'on' settings?

No idea .... rarely am I able to switch mine off. @kimble might know.

One of them is "on, whatever the weather", and one is "on, except when it's sunny". That's the Senso one.
This time of year, it will very likely be on all day whichever of the two you choose.
