This is a good pub which does food (just round the corner from the Cafe Royal): http://guildfordarms.com/

As for "must-sees" - there's the Castle and the Palace of Holyroodhouse if that is your kind of thing. The walk between them down the Royal Mile will give you your dose of tourist tat (DO NOT go to the Scotch Whisky Experience...)
Go and climb Arthur's Seat and count how many different languages you hear spoken on the top. Calton Hill is less strenuous and also has good views.
Do museums/art galleries interest you? There's http://www.nms.ac.uk/national-museum-of-scotland/ plus art galleries.

(If you are actually staying nearer Haymarket I can recommend a bunch more places (that's the end where I live) but they're a bit far from St Andrew Square.)

I like The Ship on the Shore if you like seafood but being down in Leith it's not entirely central. Not an expensive taxi ride though. Or there's Hoylrood 9A if you like quality burgers, and a nice gastro pub atmosphere with some nice real ales on tap.

Oh yeah, Hector's in Stockbridge is a cracking wee pub, as is the Scran and Scallie which is conveniently located next to Franco's - one of the finest chippy's in Edinburgh.

Forgot about the Scran and Scallie. Definitely worth considering

Wash your mouth out with carbolic soap.
I am sat here with a pleasant cheapish whisky at the mo.........having slogged my way around a golf course.
A nice whisky is a thing of beauty.
No it's not. Scotch tastes and smells horrid. JD and Coke on the other hand can be enjoyable from time to time
