I have an Etrex Legend HCx and I'm thinking of upgrading to the new Etrex 20. However, all my bikes have a RAM mount on them for the Legend, will the Etrex 20 fit securely into these mounts or will I have to replace all 3?

iirc the Etrex 20 package dimensions/form factor are identical to that of the Vista range.

I went with the spiffing new Garmin stem mounts for my Etrex 20.

When I first got the Legend, I heard iffy reviews of the Garmin mounts. The RAM mounts wasn't actually much better so what I have now is the RAM cage cable tied to the stem with an old inner tube underneath. I take it the Garmin mounts have got better?

Yes. ime, anyway. The new Garmin mount above attaches to stem or top tube with two decent quality zip ties and the back is sculpted to allow for round tubes. The clip mechanism is not easy to undo, and indeed needs a bit of care/force to insert and engage. Once on the mount(s) on the four bikes, including an mtb I have them on, my Etrex has sat there resolutely uphill and down dale for several 1000km. I've crashed the mtb four or five times with it on and the garmin was unbowed.

You do have to make sure the Etrex is locked in place and you do have to make sure the back door of the Etrex is on properly but I've stopped using my other mount (which was a chinese neoprene and velcro jobbie) and sold it with my Vista.

/\/\ As above the new eTrex/Oregon/Colorado mounts are very good indeed. I've got them on both my bikes and they are very secure. Only problem is with a shorter stem as the top cap may foul the release lever. You may have to mount it to the handlebar or top tube in that case, or do like I did and tweak it with a bit of rubber and 5 mins with a dremel.

Make sure you get genuine ones though as the (virtually identical) copies will instantly eject you device at the first bump in the road

What features does the eTrex 20 have over the Vista HCx I have? Can you still manually edit directions using something like routeconverter?
