Eurovelo 6 Next Summer

My wife and I plan to cycle the Eurovelo 6 next summer, probably in June, between Ulm and Budapest. Since we will not be camping on this tour, we want to be sure that there will be lodging available between stops. Our goal is around 50 mile days but 75+ is not unreasonable for us but not for day to day. We are getting a bit long in the tooth. How easy will it be to book accommodations as we go, say booking a day ahead of time?

Any other thoughts that you feel might be helpful are welcomed. For background, we typically plan our own tours and we have been to Europe a couple of times. I am writing from the other side of the pond.

We cycled to Budapest from Holland last summer. Had no problem finding accommodation. When we knew roughly where we'd be in the evening, we looked for a hotel on Google maps, rang ahead and booked a room. In big cities (e.g. Vienna, Bratislava, Budapest itself) we rang a couple of days in advance.
