One of the best rides I've ever had the pleasure of doing is the 23 kilometres from Monieux, along the Nesque Gorge to Villes sur Auzon right under Mont Ventoux. Absolutely stunning scenery! We could have made it a circular route, but after stopping in Villes sur Auzon for lunch, we decided the gorge was worth a second look, so made the gently climbing 23 kilometre return trip re-tracing our wheel tracks from just a couple of hours previously. If I was lucky enough to live in Provence it would definitely be classed as a favourite ride.
Living on the Isle of Wight I'm pretty much spoilt for choice for fantastic rides, whether on the road bike or the MTB and I would say that of all those my favourite is still a route called "The Seven Hills". Basically it is an off road ride that crosses the island from west to east, starting in Freshwater and ending in Shanklin. It's about 27 miles and, as the title suggests, takes in seven of the most challenging off-road climbs on the island. Seven fantastic descents too though!!
