I’m not keen on the decathlon with the proprietary components
I wouldn’t have the Voodoo cos of the colour, while the Marin is a lovely one.
For your off-road uses, the suspension will be an asset I think

One final thing - Can I just buy any mud guards and pannier rack, or is there a specific fitting that I need to buy?

You need ones that fit the bike, potentially disc specific rack wise.
I’d wait until the bike arrives (looks like could be 2 weeks from the website). Do you need both urgently?

20" - I'm in Doncaster, South Yorkshire.
But - I need it delivering, I live with a 'high risk' person and in the current times we're completely isolated.

Yep
The advantage of CR is that they will deliver the bike fully built.
My other options is another Marin from discount cycles direct. I can get a DS3 for £460. But they won't ship it built, and according to the site I will have to align/adjust brakes, bearings, wheels etc - and I'm not sure how easy any of that is for a total novice!
