I've just realised that I've done a minor thread resurrection on this one. It's not that old (only 4 months or so) but the OP hasn't been seen since the day after posting it.

I'm not sure how that happened.

Oh well.

The changeover from Paris de Lyon to Gare du Nord is just a couple of stops on the Metro or RER, I forget which.
RER line D, 2 stops.

You could consider getting a bike friendly train to Dover, go through the tunnel in the bike shuttle service (if they still do that) and continue slowly on bike friendly local trains.
It's Folkestone for the tunnel bike shuttle, Dover for the ferries including DFDS to Dunkerque. Both are possible but a bit clunky from beyond London due to timing changes to avoid peak-time bike bans.

They do still do that, two crossings each way per day, picking up from the Holiday Inn at Folkestone (so take the train to Folkestone not Dover!). The outward crossings are at 08:00 and 14:00. It's £50 per bike each way.
