They seem to work ok plus it's not that easy to get 105 stuff any longer than 175 or at least 175 is commonly available.
I would find 140mm cranks OK if that was all I had ever ridden.
Your bike doesn't fit in the way a med bike fits a med rider. You have never ridden one that fits well because no brand makes them. The only source of big, well proportioned bikes for very tall riders is US custom maker Zinn.

I'm not sure about that. To me bike fit is first about comfort and second about being able to channel the power. Both bikes have the same geometry between contact points and one was bought specifically for LEL. To cycle 900 miles in 5 days on a bike that didn't fit would have led to huge problems I would have thought. I've also not noticed issues transferring power apart from when I first got the second bike and the saddle was a lower profile than I was used to resulting in a difference of about 3 - 4 mm between me and the pedals. I noticed the extra effort required to maintain speed almost immediately and fixed it.

Sheldon Brown reckoned crank length is not relevant. He rode all crank lengths from teeny teeny short ones right up and found that he got used to them all very quickly.
