Fitting / sizing for next road bike

You normally have the fit done after you buy the bike. There are companies that I think could do what you say with a special jig, like cyclefit, doesn't come cheap though

How tall are you out of interest? Whyte say 5'9 to 6' for the 56cm

Yes, you could always shorten the stem a bit, although a 54cm might be ok if your reach is short
