My Christmas present was a La Pavoni coffee machine.
It uses differently foamed milk, not heated as much as latté or the milk used in capupccino, they should use the milk from the bottom of the jug which doesn't have much froth.What does flat mean with regard to the milk?

I'm a bit of a coffee snob. I have a Gaggia espresso machine, and a burr griner. My current favourite is flat white.
