Freezing eggs....advice?

Anyone got any advice on freezing [chicken] eggs? I bought 15 eggs on Saturday, which is what I normally do, but I go home next Monday so won't use them all. I couldn't work out how many eggs I wanted for this week so just went mad ;)

Anyone frozen them before? I reckon just crack them, whip them? Then just use them for omelettes/scrambled egg.

What are the eggs like after? Would I just be better taking them home and not being so tight? :biggrin:;)

Freezing omelettes is fine. I don't think you can freeze raw eggs due to the high water content turning to ice.

Tinternet says you can't freeze them in the shell but can save egg mixture.

Advice is to combine the white and the yolk without beating in any (much) air - stick resultant mix in a freezer bag.

Defrost in a fridge and use immediately - no using a microwave or leaving out in the kitchen.

There could be some effect on taste too

Just keep them in the fridge - as long as they're reasonably fresh, they'll stay usable for ages - two or three weeks at least. A simple test: Put egg in water - if it floats, it's not fresh.

Put them in the fridge and they will keep for quite a few weeks. If you turn the fridge off when you go away it might not be so good!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

They will be fine for at least a couple of weeks after the use by date on them. If that means they are still usable when you get back, just leave them in the fridge.

Fridge will probably get turned off. I'm away for more than 2/3 weeks too xx(. Freezer seems to be the sure fire way of making sure they're okay. :ohmy:
