I'm not going to nominate anything that's just selected songs. I'm only going to consider real soundtracks, composed specifically for the film. Clearly the OP's The Good, The Bad and the Ugly is a classic. Almost anything by Morricone in fact, Once Upon a Time in America, The Mission.

I do like those more abstract Herrman ones like Taxi Driver too. However, I don't think he ever bettered his score for Vertigo:



In that vein, here's Jonny Greenwood's Hermann-like soundtrack to There Will be Blood:



John Barry was really good, much too good for Bond really, and On Her Majesty's Secret Service is his best:



I'm a huge sucker for Lalo Schiffrin. Bullitt is great:



One of my favourite contemporary score is the RZA's amazing hip-hop-jazz thing for Jim Jarmusch's Ghost Dog:
