Your question could do with being re framed.

One of the problems with France is that their retail establishments appear to be regional and what is widely available in one regions stores doesn't necessarily carry over to the next region which might well have a different set of retailers.

You might get the answer that you want by specifying which parts of France you intend to cycle in then folk who are able to contribute through purchasing similar canisters in the regions concerned will be able to help you.

I have seen them all over France in DIY stores- Mr Bricoedge etc - they fit blow torches

The blowtorch canisters, although a similar shape, are generally screw valve fitting.
