I have been looking at graval bikes and I am a fan of both Trek and Giant
Which is your go to here is a few pictures

My go to is Trek (from these two) - I have had a few bikes from them over the years and as a taller rider I know their off the shelf sizing is a good fit for me.
 
I’ve built both makes while working for bike shops, I found Trek‘s bikes to be better quality out of the box, with fewer proprietary oddities to deal with as well.

Having said that once set up properly by the dealer either bike should give years of service without much trouble so it all comes down to the fit of the bike and which dealer seems to be the better one. Test drives will tell you which bike is best, ask around about the shop. The shop can be more important than the make of bike.

The Trek has a 1x drivetrain, which is good if you will be on rough surfaces, but bad if you need to climb steep grades, then you'll want the 2x drivetrain of the Giant; and due to the 1x drivetrain there be a tad less maintenance. But due to the geometry the Trek will supposedly have more stability on the gravel, with a faster feel, consider it more of a performance gravel bike so it won't be quite as comfortable as the Giant because the geometry is more of an endurance set up made for longer rides. The Giant will have more tire clearance so you can put on larger tires if needed.

You might want to consider the Cannondale Topstone 2, it uses their Kingpin suspension which will make riding on rough surfaces more enjoyable on long rides, plus the frame geometry is geared for comfort and is very stable. Just a thought.
