Uncle Mort said:Some purists swear by the Mont-Saint-Guibert version (where they alslo used to brew Vieux Temps), others by the Overijse incarnation. But to be fair to InBev, I've been told by the veterans that they do keep the recipes pretty identical to the originals (or at least the ones licensed to smaller breweries). Leffe still makes some very good brews, and even the blonde isn't bad on tap. It's in a different league from Stella!
I'm sure InBev brewmasters are as competent and as proud of their work as their forebears but brewing is surely as much about terroir as winemaking. The water will be different, the process on a much la(r)ger scale and the product won't be the same. That said Leffe Blonde is my keg beer of choice in pubs that don't stock anything 'real'
