Greg Lemond upgrade

Hi there. I would like some advice on upgrading the wheels and gears on my 2005 Greg Lemond Etape. I love the bike but find now that I never use the granny wheel but if I want to be serious about improving the bike's performance think I should upgrade wheels as well.

I don't suppose the granny ring weighs much, so its not particularly improving the performance of the bike to remove it. I keep the granny on my carbon/alu racer, and its saved me a few times. Wheels can be a nice upgrade, but you can often derive similar / greater increases through tyres / tubes, at lower cost.

Another question would be: Are you trying to remove weight, improve stiffness, ultimate top speed or acceleration?
