The Brook pub in Bournbrook (one of my drinking establishments, and my wife's favourite from her time at the University) was knocked down and replaced by a Tesco Express, which now appears to be the Seoul Plaza. No stuffed animals when I was drinking there.
You may be talking about the Old Varsity Tavern which then became The Goose at the OVT, a much older building. Again, no stuffed animals in my day. Like most pubs in the area, it swung between very studenty (no entrance without an NUS card) to not particularly studenty.

White Swan / Dirty Duck is still there. Now describes itself as a gastropub.
