Help me write a shopping list

I'm going to rebuild my crash damaged hybrid. I've got a Swytch kit on order so it'll be rebuilt as an e-bike using that.

I've already bought a new set of forks and the forks and frame have been repainted. I've an engineer friend who'll help me put it all together, but I need to buy the bits first. There may be a few things that I can reuse.

So I'm putting together a shopping list of what I think I need.

Wheels - Front wheel comes as part of the Swytch kit. I think the rear wheel has a freehub. Does that matter as long as it matches the cassette?
Headset
Stem
Handlebars - may reuse.
Handlebar grips
Cassette - 7 speed 28x24x22x20x18x16x14
Chainset - 3 speed 48x38x28
Bottom bracket - needs to be the correct one for the chainset?
Cranks - come with the chainset?
Pedals - may reuse.
Front Derailleur
Rear Derailleur
Brakes - v brakes
Guide pipes & rubber boots - come with the brakes?
Levers - combined brake and gear
Seat post - may reuse
Saddle - reuse

Consumables
Tyres
Tubes
Chain
Cables - brake & gear

Extras
Mudguards
Rack
Kick stand
Bell

So what have I missed off the list? And what more information do I need before I start buying bits and pieces.

I need to get motivated and get this built. There are too many hills around here for me to comfortably ride far and too many excuses stopping me going out at all.

Are you sure it wouldn't be easier just to go out a buy a new bike?

The only things that I can think of that aren't on your list (but you've probably got them anyway) are:

Lights
Bottle cages
A GPS computer or simple odometer

My thoughts echo @bluenotebob and I suggest you buy a new bike. By the sound of it the only thing left after your crash is the frame. If the crash was so bad to cause this much damage are you sure the frame is safe?

Buying parts individually is always more expensive than buying a complete bike. I feel your chasing a false economy. This will prove to be an expensive exercise.
