They are pretty easy to release (unless you adjust them too tight). Just twist your foot outwards. And if you fall off, they normally release as you do.
+1 for this, if not they may stick and not release. Turn the tension on the pedals down to the minimum until you get used to them, it makes unclipping a lot easier.I'd give the pedals a damn good spray with GT85 or WD40, they look rusted to shoot.

It's hard to unclip with a broken elbow and a bike lying on top of you.Ouch!
I think I have only had one fall where mine didn't, and that was very low speed. It was actually quite hard to unclip then while I was lying on my side.
