I cooked this evening & did a kind of twice baked potato :biggrin:

Baked spuds, scoop insides out & mash up with pepper boursin, bacon & mushrooms & topped with mature cheddar :biggrin:

And tonight's meal will be Homemade Spicy Carrot soup with Parmesan and Sun Dried Tomato bread. Then it is Chicken in White wine sauce with herby roast potatos and steamed fresh veg.

Sounds delicious, but you don't fool me! You only cook a meal worth posting about once every 6 months... trying to make yourself sound all sophisticated making curry in April and carrot soup in October... should be ashamed of yourself! :arrow:;)

Tonight it's curry. However, last night I had:

An amuse bouche of Green Vegtable and Ham Soup
Gunea Fowl and Ham Hock Terrine with a Beetroot Reduction and Micro salad
A pallete cleanser of Lemon and Basil Sorbet
Slow Roast Blade of Beef and Rare Fillet served on a Garlic and Herb Rosti and Wild Mushroom Sauce
Coconut Creme Brulle with Mango Sorbet and Lemongrass Tuille
And to finish, Handmade Chocolates


You guessed it, I ate out last night:thumbsup:;)

Tonight ,we are having chili with, wait for it............ cheesy mashed potato ! ( proper comfort food ).

Washed down with bottles of corona extra with limes.
For dessert we have bread and butter pudding and custard .

I love lazy saturdays ! ;)

Now THAT sounds awesome! Roast chicken salad for us. And a bottle of Argentinian Malbec... the finest wine known to humanity (for under a fiver!)

Cut up carrots and celery, sweat some onions and garlic, then add carrots and celery. Add stock and mild curry powder to taste and simmer till soft. Blemd till smooth. Make some bread, any flavour you want, but fresh is best.

Slice chicken breast to form a pocket, insert a clove of garlic and slice of lemon. Top with a slice of lemon and put in lidded oven dish. Cover with dry white wine. Drizzle with olive oil and sprinkle chopped rosemary (not too much) Then roast them, turning occasionally.

Sweat some onions and leeks in a pan with butter then stir in wine from now cooked breasts. Add Creme Fraische (sp?) and whisk till thickens (may have to add more creme) I added rosemary, chive and thyme here too, all chopped finely.

Steam up seasonal vegs and serve all hot.
