Here - I saved it....... it is awesome - very aromatic, but not hot - you can do hot by adding chilli, but it's great for kids - they woofed it up.......

Carribean Lamb Curry with sweet potatoes.

Quality olive oil
2 small sweet potatoes, peeled and diced
800g diced leg of lamb (any excess fat trimmed off)
1 medium onion chopped finely,
4 garlic cloves, crushed
1/4 tsp ground cloves,
½ tsp ground turmeric,
½ tsp ground cinnamon,
2 tsp mild curry powder,
2 tsp garam masala
1 can of chopped tomatoes,
juice of ½ lime,
300ml chicken stock,



Prep all the ingredients, then heat up a large pan/wok, add a bit of oil and cook the lamb, turning it till it’s nice and brown all over. Put the lamb on a warmed plate, and then add the chopped onion to the wok and cook till golden brown. Add the lamb again with the garlic, the spices, chopped tomatoes and lime juice. Cover and cook gently for 5 mins.
Add the stock, bring to the boil and simmer part covered for 1 hour, then uncover the curry, add the sweet potatoes, ¼ tsp of salt, and cook for a further 15-20 mins till the potatoes are tender (hint – small dice) and the sauce has thickened and reduced.

A viral thingie I've had for a few years now....starting to pi** me off big time but docs can't seem to offer me anything other than 'rest' and 'liquids'. :boxing:

Been off work all week, and no sign of it going away. :biggrin: And I ain't good at being off work nor not being able to eat nor not being able to exercise. I may have been slightly grumpier than usual of late on here....but I try to keep things as light-hearted as I can.

That's what I need, something that smells good and tastes good as everything is tasting fairly bland just now and I'm eating just for the sake of it.

Palak Murgh Makhani is what I'll be ordering, tried it last week and think I'll have the same again.

Tonight, I will be having casseroled pheasant (in cider and apple), with mashed potato and cider stewed red cabbage. With a glass of cider - I have to use it up...:biggrin:

Talk about domestic goddess, I had the cassrole in the oven, the cabbage stewing on top and I wrapped all my Christmas presents....

Sorry, Jamies roasties are nothing special, Mrs VC has declared that she prefers them the way I usually do them. The coq was nice though.

A lot of people don't like JMee, but I like his attitude that anyone can cook.

I used to be a take away bloke, but now I prefer to scour the greengrocers and butchers then do it myself.
