Can anyone recommend what accessories are most important, other than a helmet?

I would say first off, a pump, well a Track Pump, which is a large home based one plus one to carry on the bike. Then you will want to protect your pride and joy, so a good lock. Then maybe a a spare inner tube plus some tyre levers. If you haven't got a bottle cage get one plus bottle. After that some cycling shorts. People will then tell you to get some shoes. You can go on and on!

accessories - as per Cycleops post and then...lights, tights, knickers, shorts, base layers, short sleeve jerseys, long sleeve jerseys, lightweight rain coat, overshoes for your new shoes to protect your new socks, socks - summer/early winter/winter, mitts, gloves, buff, glasses, garmin or other such computer, turbo or rollers for when the weather gets the better of you and of course when you're done with all that, you'll be wanting to add to the number of bikes you own, another bike...
