i actually have lots of copied recipes here but i haven't tried making one bacause i am still contemplating on the fact that it uses raw eggs. i am hoping of finding one that doesn't use raw eggs.:blush:

There are loads of recipes that don't use raw eggs, and if you found one flavour ice cream that did use eggs I'm sure you could substitute one of the other base mixtures instead. If you have a particular flavour ice cream you are looking for I will looking it up in the couple of books I have and see if one of the recipes doesn't have eggs in it.

Gareth's link was very useful in that respect. Some recipes use yoghurt or cream, and some use eggs. I am sure, as you suggest that the base mixture could be subsitituted. I might try the fruity ones first. Strawberry or melon and ginger.

Simple Vanilla Ice-Cream
2 egg yolks
75g caster sugar
1tsp vanilla essence
300ml whipping cream

Place egg yolks in a bowl with sugar and vanilla and whisk until thickened and creamy.
Whisk cream in separate bowl until stiff then fold into egg mousse.
Transfer to shallow container and freeze until firm.

For mint choc chip:
Replace vanilla essence with mint essence and add a few drops green food colouring. Add a bag of chocolate chips to mixture when folding together.

For strawberry:
Replace vanilla essence with 2tsp strawberry essence.

These recipes take ten minutes to make and taste great. She's not sure which recipe she's using for the chocolate, can't remember which one is the best.

I think they all use a sort of base mixture then a few recipes need to be sweetened a bit extra.

I've never heard of strawberry essence before.
