So it's colder, and more viscous, when I spread it on some crusty bread, that's why..Why would you put honey in a fridge? (Well apart from stopping it from clouding, of course.) Honey doesn't need a fridge and if it clouds, stick the jar in a pan full of hot water.

Yes. Set honey is crystalised. Crystals grow around other crystals (or impurities). If you warm the honey, you destroy all of the crystals. It may crystalize again, but so may normal unset honey.crystals?
