Thumbs up for Tailfin from me - their website has useful diagrams showing the different luggage setups, I also have some Old Man Mountain bits as well, it really depends on whether you are camping or airBnB and whether you are luxury or cave dweller minded, my key advice is - be mindful of the weight, evaluate every item and make sure you are happy with the benefit/weight ratio, it is very easy to add weight to your setup, when everything is going well you often don't notice it but when you are at a low point it can be soul destroying feeling like you're dragging an anchor.
There are some excellent comfortable backpacks available - I have an Osprey Escape 25 which is designed to be worn for both hiking and cycling, I use it for lightweight bulky stuff like clothing, it also has a dedicated space for a hydration bladder and lots of useful pockets. The camping bits - tent, sleeping mat + bag, cooking bits etc all go on the bike.
Remember - watch that weight!
