One of my best mountain bike rides ever was when I dared to go out in snow; there's a track that runs about three miles along the top of Holcombe Hill, above Ramsbottom. Normally it's a tough ride, being muddy, rocky and quite uppy-downy. On this day Mrs Gti and I went out and we found it filled fom bank to bank with drifted snow, which had partly melted then refrozen so that it was firm enough to support a bike. The surface was covered in grippy granulated snow, exactly the sort of conditions that ski tourers will trek miles to find, it's called spring snow and it's a delight to ski. We found that we could ride along it easily; we raced along with tyres crunching, very little effort needed, swooping up and down the hills and whooping with delight. It was like riding on a very hard golf course or a very smooth trail centre. Snow conditions like that are pretty rare but if you keep looking you will find them one day.
bought the MTB specifially to go out when it snows and its bypassed us once again!

if we didn't have them we would have snow!
