It's hard to tell from the pic. As a starter, what is your height, and what is the size of the bike?
 
I was taught back in the day the seat height was adjusted so that the flat of the foot must be on the ground.

Roll on nigh on 50 years I was re educated to the intricate, time consuming, trials and errors of finding that seat height/handle bar position. After 200 miles still can't find it on my new bike.

Yeah definitely big bloke on wee bike.

Though I see it's some sort trail bike. Does seat positioning of road biking apply to off road?

For mountain biking the seat positioning is the same just a bit lower. Also on long technical downhills you tend to drop the saddle low to keep it out the way.

Big bloke little bike, looks like you run the risk of hitting your knees on the handlebars.

I use the same height on MTB as road, Its the most efficient postion so why change it, I have a dropper post for the downhill stuff.

If i had the saddle the same height as on my road bike where we ride i would take a beating and not be able to move round the bike as easily. Main thing is set the bike up for how and where you ride

Foot flat on the ground? That's never been considered right. Way too low. Even 40 years ago when I were a lad we had just able to stand on tiptoe as our rule of thumb.
