Ideas for December tour

Take a train to Aberdeen and head along the flat Dee to Braemar.
Its quiet December , with plenty of B & B + hostels, so you can play it by ear and head along the highlands, weather permitting, from Braemar for a few days.

Come down South and cycle around Sussex, Surrey and Kent, and throw in a couple of days around the isle of Wight, some nice routes and lots of interesting sights.

As for camping in this part of the year: this one has many nice campsites including ones that are open in the winter (the purple ones on the map: http://www.communitywalk.com/map/14583). Archies campsite database also has opening periods I think.
