I used to have my steak blue. A steak chef told me to always have it medium rare for the best flavour. He's right, been that way ever since.

Red meats can be flash cooked - so long as it's seared on the outside, it's fine. I've changed my taste with steaks from "well done" to 'medium' in a restaurant, but we go medium rare at home.

Cant abide overcooked red meat. Has to be medium rare at the most. Mrs Ian on the other hand likes everything cremated.

A farming friend once said to me that his cattle should "have its arse wiped & ran under the tap".
Personally I like it medium to medium rare & a steak from one of his cattle held back is pure heaven.

He would say that, wouldn't he? His job wouldn't exist if everybody wanted bloody meat. Maybe he could re-train as a butcher.
