There's all sorts of stuff, including the aforementioned freezer bags and ziplock bags and finally, something well known for its ability to as a barrier to liquids, condoms. Your phone might smell strange when you take it out, though it would explain why HTC called it a "Desire".

I use a rack pack, so just wrap the phone in a plastic bag inside the pack. This has the advantage of not only keeping it dry but also making the ringtone virtually inaudible when I am riding.

Another vote here for the humble zip-lock bag.
