Lightweight touring on Giant SCR4

I'm doing the Way I the Roses in June. Going lightweight - b n b so just a spare pair of bibs, jersey, lightweight trousers for evening, couple of t-shirts and a pair of sandals. Shouldn't amount to much weight. Doing it on my Giant which is proving to be a bit of a workhorse. I cant afford to think about buying a tourer until i know i like touring. Thinking of changing rear tyre - Got 25s on at the moment but thinking of sticking a 28 on the back. Worth it?

I wouldn't bother, but why not try a test ride with your luggage and see how it goes?
 
If you're not fully laden with heavy pannier bags then 25's should be OK. Actually if it was me, I'd choose 28's or 32's but then I like them anyway for a bit more cushioning.
Maybe the best compromise would be to buy a folding spare like a 700x28, and include that in your 'luggage'.
