Google Maps Timeline gives me a rough route but no speed or elevation data, can't attach photos, can't share it with anyone. Strava records the ride but the fitness framing feels wrong for touring.
Is there something that just records a trip well and lets you review and share it afterwards?

My Garmin does that, I don't use the planning bit at all.

What device do you have?

If just recording on your phone, then Strava is your best bet, but there are others.

If you have a Wahoo or Garmin or other brand of cycle specific computer, then their associated app will be the best, particularly if you don't like Strava.

I'm not sure why you feel Strava is not good for touring. You can ignore all the AI bits telling you how you have improved your fitness etc.

Attaching photos, notes and so on is probably the difficult bit here. I use GPSLogger which lets me add short annotations to the recording, but for photos, I use the regular camera because it's the fastest and easiest to open, but I let it geotag photos so I can match them up later.

Deep inside my Cowboy E-Bike every move under power is recorded.
Do wonder what the implications are.
Some troubled mind could analyse the data and learn things I might not want made public. Like where I go most Monday lunchtimes.

Anyway, Komoot does what you seem to want. Buying the maps is a pain. You can save every ride, if you remember to switch it on and tell it to save at the end of the ride
