I can never get the rizlas round the bacon.
It's getting it lit that's the problem IME.

We cured a couple of joints off one of our pigs last autumn. We followed the method in Hugh F- W's book and while it did cure and you could eat it raw it just didn't taste right, very much preserved pork rather than bacon like. We binned it all as a result.

If I did it again I would buy some cheap supermarket meat to experiment with before using any decent stuff, there's a bit more to it than you might think.
