All decidedly British middle-class. None of them both European/Mediterranean and peasant.

Is goose fat still around? I thought it was a flash in the pan Delia Christmas marketing scam that died the death pretty quickly. My attempts to make roast potatoes with it were a Yuletide debacle. Mind you, I'm a useless cook.

Goose or duck fat both work well. Beef dripping is pretty damn good, and bacon fat works as well. Mmm, bacony toasties...

Geese are still fat, yes.

Waitrose still stocks goose fat year-round - in our local branch you'll find it in the same fridge as the organic unsalted butter.

After a bit in the fridge, I decided on 2nd tasting, it was actually a bit too lemony, not quite tahini enough but a good consistency. So the next batch will be altered, though I've also decided I've temporarily gone off hummus.

Of course my authentic middle eastern roots compel me to belittle all you philistines with the knowledge that 'hummus' just means chickpeas in Arabic. The food being discussed in this thread is actually hummus bi tahini

As for Ugali, Peter Moore, in his excellent travel book No Sh**ting in the Toilet, describes it thusly :-
A tasteless mixture of maize and water that will leave you feeling leaden and queasy.
I defy anyone to gaze upon a plate of ugali and claim that they haven't been ripped off. Even if they got it for free.

Sadza (same dish different name in Zimbabwe) is great around the Braai - Saza and gravy, boerewors and steak with a crate of Castle

Delete temporarily and then this is the correct course of action.
